Calculate exactly how much water to add in the backcountry to restore dehydrated ground beef or stew meat to its original volume and texture.

Master Rule: Beef loses 75% of its weight during deep dehydration. You must replace exactly that much water to rehydrate properly.

Always add breadcrumbs to ground beef before cooking and dehydrating; it creates porous channels that allow water to re-enter the meat rapidly.

Rehydration Times by Method

Method Ground Beef "Gravel" Sliced Stew Meat
Boiling Water (Cozy) 10 - 15 minutes 20 - 30 minutes
Cold Water Soak 2 - 3 hours 4 - 6 hours
Simmer on Camp Stove 5 - 10 minutes 15 - 20 minutes (burns fuel)

Precision Master Protocol

  1. 1
Step 1: At home, cook very lean ground beef (90/10 or better). Rinse under hot water to remove all fat.
  2. 2
Step 2: Dehydrate at 160 F until completely hard and brittle ("beef gravel").
  3. 3
Step 3: In camp, place dry beef in pot or freezer bag. Add exactly the calculated amount of water.
  4. 4
Step 4: If using boiling water, insulate the pot or bag (use a cozy) and let sit undisturbed.
  5. 5
Step 5: Check texture. If slightly crunchy, add 1-2 oz more boiling water and wait 5 minutes.
