The Tallow Buffing Secret: Melt tallow to warm liquid (120 F), dab onto warm iron, then wipe with three successive clean cotton towels until the pan appears completely dry. Only the microscopic layer trapped in the iron pores will cross-link cleanly at 425 F.

1Preheat raw, clean cast iron in a 200 F oven for 15 minutes to fully open metal pores and vaporize all moisture.

2Melt Pasture-Raised American Beef tallow to liquid state (around 120 F). Tallow must be clarified and pure with zero moisture or salt.

3Apply the calculated initial tallow dose across the cooking floor, exterior walls, and handle using a dedicated basting cloth.

4Take a dry, clean lint-free cotton cloth and aggressively buff the entire skillet. Repeat with a second clean dry cloth until the metal shows no wet reflection.

5Place skillet upside down on the middle rack of an oven preheated to 425 F (25 F past tallow smoke point). Bake for 60 minutes.

6Allow skillet to cool completely inside the closed oven for 2 hours. Repeat the cycle 3 to 4 times for an impervious heirloom black patina.
