Grind the cold suet through a meat grinder or pulse in a food processor before rendering. Small pieces render twice as fast and yield more tallow.

1Step 1: Trim all visible meat scraps from the suet. Meat contains water which will cause the tallow to sputter and spoil quickly.

2Step 2: Chill suet until extremely firm, then chop into 1/2 inch cubes or grind coarsely.

3Step 3: Place in a slow cooker on LOW or a heavy Dutch oven over the lowest possible heat.

4Step 4: Stir occasionally. As it renders, the white fat will release clear golden liquid and the tissue will shrink into brown cracklings.

5Step 5: When cracklings sink to the bottom and bubbling stops (meaning all water is evaporated), strain through cheesecloth into sterile jars.
