    1. Pat Dry & Season: Pat oxtail pieces thoroughly dry with paper towels. Season liberally on all sides with kosher salt and freshly cracked black pepper 30 minutes prior to searing.

    2. High-Heat Hard Sear: Heat a heavy cast-iron Dutch oven over medium-high heat with 1 tablespoon of tallow. Sear oxtail sections in batches without crowding for 3 to 4 minutes per side until a deep mahogany crust forms.

    3. Deglaze Fond: Remove oxtails to a plate. Drain off excess rendered fat, leaving 1 tablespoon in the pot. Saute mirepoix (onion, carrot, celery) and tomato paste, then deglaze with red wine or rich beef stock, scraping up all caramelized fond.

    4. Braising Assembly: Return oxtails and any accumulated resting juices to the pot. Add braising liquid (stock and wine) to reach halfway up the sides of the meat. Add thyme, bay leaves, and allspice berries.
