    Step 1: Grind lean beef, lean pork, and hard pork fatback through a fine (4mm) plate.

    Step 2: Mix thoroughly with salt, Cure #2, spices, dextrose, and the dissolved starter culture until a sticky primary bind forms.

    Step 3: Stuff into medium hog casings (32mm) and twist into the desired link length.

    Step 4: Ferment for 48 hours. Then place links side-by-side in a wooden pressing frame lined with parchment. Apply the calculated weight evenly across the top board.

    Step 5: Press in the fridge for 2 days to set the rectangular shape, then cold smoke and hang to dry.
